Pumpkin Pie



1 (8-ounce) package cream cheese, softened
2 cups canned pumpkin, mashed
1 cup sugar
1/4 teaspoon salt
2 eggs, slightly beaten
1 cup milk or half-and-half
1/4 cup (1/2 stick) melted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger, optional
2 pieces pre-made pie dough
Whipped cream, for topping

  1. Preheat the oven to 350 degrees F.
  2. For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined.
  3. Add the sugar and salt, and beat until combined.
  4. Add the eggs, milk or half-and-half, and melted butter, and beat until combined.
  5. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated. Set aside.
  6. Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides.
  7. From the second piece of pre-made pie dough, cut out the largest tire shape possible that is 2 inches in width.
  8. Position the tire around the edge of the pan, and then pinch and crimp the edges together to make a pretty pattern.
  9. Pour the filling into the prepared pie crust and bake for 50 minutes, or until a knife inserted in the center comes out clean.
  10. Place the pie on a wire rack and cool to room temperature.
  11. Cut into slices and top each piece with a generous amount of whipped cream.

 

Pecan Pie



1 stick butter
1 cup sugar
1 cup Karo syrup
3 eggs, beaten
1 cup chopped pecans
1 unbaked 9-inch pie shell

  1. Preheat oven to 350 degrees F.
  2. In a saucepan, melt the butter but don't let it brown.
  3. Mix in the sugar and corn syrup and cook, stirring, over medium heat until the sugar dissolves.
  4. Stir in the eggs. Mix well.
  5. Stir in the pecans.
  6. Pour into the pie shell and bake for 1 hour or until firm when shaken.

 

Sweet Potato Pie



7 cups mashed cooked sweet potatoes
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 tablespoons vanilla extract
2 teaspoons lemon extract
2 1/4 cups granulated sugar
1 cup honey
4 jumbo eggs
2 deep dish pie shells
Whipped cream, for garnish

  1. Preheat the oven to 350 degrees F.
  2. Place sweet potatoes, nutmeg, cinnamon, vanilla, lemon, sugar, honey, and eggs in a large bowl. Blend ingredients together until they are thoroughly mixed.
  3. Equally distribute the sweet potato mix into the pie shells.
  4. Place some aluminum foil on and around the edges of the pie shells so the crust will not burn when the pies are baked.
  5. Place pies in the oven and bake for 45 minutes.
  6. Remove from the oven and let cool completely before serving.
  7. Serve with whipped cream.
